Ingredients
2 large boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon Italian seasoning
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1 cup chicken broth
3 tablespoons Dijon mustard
3 tablespoons fresh lemon juice
1 lemon, sliced
2 tablespoons fresh parsley, chopped
2 tablespoons heavy cream (optional)
Instructions
1. Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, paprika, and Italian seasoning.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
3. Add the chicken breasts to the skillet and sear for 5 to 6 minutes on each side until golden brown.
4. Remove the chicken from the skillet and set aside on a plate.
5. Lower the heat slightly and add the minced garlic to the skillet. Stir for about 1 minute until fragrant.
6. Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits.
7. Whisk in the Dijon mustard, lemon juice, and remaining butter until the sauce becomes smooth.
8. Add the lemon slices and optional heavy cream to the skillet.
9. Return the chicken to the skillet and spoon sauce over the top.
10. Simmer for 8 to 10 minutes until the chicken is fully cooked and tender.
11. Sprinkle fresh parsley over the chicken before serving.
12. Serve hot with rice, pasta, potatoes, or roasted vegetables.
Notes
Use freshly squeezed lemon juice for the brightest flavor.
Do not overcrowd the skillet or the chicken may steam instead of sear.
Allow the sauce to simmer gently to keep the chicken tender and juicy.
