Ingredients

8 oz flat rice noodles

2 chicken breasts thinly sliced

2 large eggs

1 cup bean sprouts

1 medium carrot julienned

3 green onions chopped

2 cloves garlic minced

3 tbsp fish sauce

2 tbsp tamarind paste

2 tbsp brown sugar

1 tbsp soy sauce

1 tsp chili paste

2 tbsp vegetable oil

1/3 cup crushed peanuts

1 lime cut into wedges

2 tbsp fresh cilantro optional


Instructions

1. Soak rice noodles in warm water for 20–30 minutes until pliable, then drain.

2. Mix fish sauce, tamarind paste, brown sugar, soy sauce, and chili paste.

3. Heat oil and cook chicken until fully done, then remove.

4. Sauté garlic and green onions, then add carrots.

5. Scramble eggs and combine with vegetables.

6. Add noodles and chicken back to pan.

7. Pour sauce and toss well.

8. Add bean sprouts and cook briefly.

9. Adjust seasoning to taste.

10. Garnish and serve hot.

Notes

Do not over-soak the noodles or they will become mushy during cooking.

Cook on high heat to achieve authentic stir-fry texture and flavor.

Always taste and adjust sauce at the end for the perfect balance.
