Ingredients

2 lbs beef chuck roast

1 medium onion, chopped

4 cloves garlic, minced

2 cups beef broth

2 tbsp tomato paste

2 chipotle peppers in adobo sauce

1 tsp cumin

1 tsp paprika

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

10 corn tortillas

3 tbsp oil

1 cup shredded cheese (optional)

1 cup pico de gallo

1 cup guacamole or sliced avocado

1/4 cup fresh cilantro, chopped

2 lime wedges


Instructions

1. Trim excess fat from the beef and cut into chunks, then season with salt and pepper.

2. Heat oil in a pot and sear the beef on all sides until browned.

3. Remove beef and sauté onion until soft, then add garlic and cook briefly.

4. Stir in tomato paste and cook until slightly caramelized.

5. Add chipotle peppers, cumin, paprika, and oregano, mixing well.

6. Return beef to the pot and pour in beef broth.

7. Cover and simmer for 2.5–3 hours until the beef is tender.

8. Shred the beef using two forks and mix it back into the sauce.

9. Warm tortillas to make them pliable.

10. Fill each tortilla with shredded beef and optional cheese.

11. Fold and fry in a skillet with oil until crispy and golden on both sides.

12. Top with pico de gallo, guacamole, cilantro, and lime juice.

Notes

Always sear the beef before slow cooking to develop deep flavor.

Do not overcrowd the pan when frying tacos to keep them crispy.
