Ingredients

2 cups old-fashioned rolled oats

1 1/2 cups all-purpose flour

3/4 cup granulated sugar

1/2 cup brown sugar

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup unsalted butter, melted

1 teaspoon vanilla extract

3 cups fresh strawberries, diced

2 tablespoons lemon juice

2 tablespoons cornstarch


Instructions

1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

2. In a large bowl, mix the rolled oats, flour, granulated sugar, brown sugar, cinnamon, and salt.

3. Add the melted butter and vanilla extract, then stir until a crumbly mixture forms.

4. Reserve about one-third of the oat mixture for the topping.

5. Press the remaining oat mixture firmly into the bottom of the prepared baking pan.

6. Bake the crust for 10 minutes until lightly golden.

7. In another bowl, combine the diced strawberries, lemon juice, and cornstarch. Stir gently until evenly coated.

8. Spread the strawberry filling evenly over the baked crust.

9. Sprinkle the reserved oat crumble mixture over the strawberry layer.

10. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbling slightly.

11. Remove from the oven and allow the bars to cool completely before slicing.

12. Serve chilled, at room temperature, or slightly warm.
