Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

2 cups fresh strawberries, chopped

½ cup strawberry jam

1 tablespoon lemon juice

1 tablespoon cornstarch

Pinch of salt

½ cup graham cracker crumbs (for topping)

2 tablespoons melted butter (for topping)

2 tablespoons sugar (for topping)


Instructions

1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.

2. Mix graham cracker crumbs, melted butter, and sugar until combined, then press firmly into the pan.

3. Bake the crust for 8–10 minutes until lightly golden, then let it cool.

4. Beat cream cheese until smooth, then mix in sugar and vanilla extract.

5. Add eggs one at a time, mixing gently until fully incorporated.

6. Pour the filling over the crust and spread evenly.

7. Bake for 30–35 minutes until the center is slightly jiggly.

8. Let the cheesecake layer cool, then refrigerate until fully chilled.

9. In a saucepan, cook strawberries, jam, lemon juice, sugar, and cornstarch until thickened.

10. Let the strawberry mixture cool completely, then spread over the cheesecake layer.

11. Mix topping crumbs with butter and sugar, then sprinkle over the strawberry layer.

12. Chill for at least 4 hours or overnight before slicing into bars.

Notes

Use room temperature cream cheese for a smooth, lump-free filling.

Do not overmix after adding eggs to prevent cracks in the cheesecake layer.
