Ingredients
2 cups vanilla wafer crumbs
6 tbsp melted butter
24 oz cream cheese
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 tbsp vanilla extract
2 cups milk
1 package instant banana pudding mix
3 ripe bananas
1 cup heavy cream
1/4 cup powdered sugar
20 whole vanilla wafer cookies
Instructions
1. Preheat oven to 325°F (163°C) and prepare a 9-inch springform pan.
2. Mix vanilla wafer crumbs with melted butter and press into the bottom of the pan to form the crust. Bake for 10 minutes and let cool.
3. Beat cream cheese until smooth, then add sugar and mix until creamy.
4. Add eggs one at a time, mixing gently after each addition.
5. Blend in sour cream and vanilla extract until smooth.
6. Pour the filling over the crust and smooth the top.
7. Place the pan in a water bath and bake for 50–60 minutes until the center is slightly jiggly.
8. Turn off oven and let cheesecake cool inside gradually.
9. Whisk banana pudding mix with milk and let it thicken.
10. Slice bananas evenly.
11. Spread pudding over cooled cheesecake, then layer banana slices on top.
12. Add whole vanilla wafers over the banana layer.
13. Whip heavy cream with powdered sugar until soft peaks form, then pipe or spread on top.
14. Refrigerate for at least 4 hours or overnight before serving.
