2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 large egg yolk

2 teaspoons pure vanilla extract

1 teaspoon almond extract (optional)

¼ cup granulated sugar for rolling


Instructions

1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Whisk together the flour, baking soda, baking powder, and salt.

3. Beat the softened butter and sugar together until light and fluffy.

4. Add the egg, egg yolk, vanilla extract, and almond extract, then mix until smooth.

5. Gradually combine the dry ingredients with the wet ingredients until a dough forms.

6. Cover and chill the dough for at least 30 minutes.

Notes
