Ingredients
2 large sweet potatoes, scrubbed and cut into wedges
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley
1 tablespoon cornstarch
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Cut sweet potatoes into even wedges. Soak in cold water for 30 minutes, then pat dry.
3. Toss wedges in a large bowl with olive oil, garlic powder, paprika, salt, pepper, and cornstarch.
4. Arrange on the baking sheet in a single layer without overcrowding.
5. Bake for 20 minutes, flip each fry, then bake for another 15–20 minutes until crisp.
6. Remove from oven and immediately sprinkle with Parmesan.
7. Garnish with chopped parsley and serve hot with your favorite dipping sauce.
Notes
Soaking the sweet potato wedges before baking helps remove starch and improves crispiness.
Use freshly grated Parmesan for a better melt and richer flavor.
Don’t overcrowd the pan—fries need space to get crispy, not steam.
