1 cup granulated sugar

½ cup brown sugar

1 cup vegetable oil

4 large eggs

1 tablespoon vanilla extract

1 cup buttermilk

½ cup applesauce

½ cup chopped walnuts or pecans optional

½ cup raisins or dried cranberries optional

8 oz cream cheese

½ cup unsalted butter

3 to 4 cups powdered sugar

1 teaspoon vanilla extract

1 pinch salt


Instructions

1. Preheat oven to 350°F and prepare cake pans

2. Whisk dry ingredients together

3. Mix sugars and oil then add eggs

4. Add vanilla and applesauce

5. Alternate dry ingredients with buttermilk

6. Fold in optional add-ins

7. Divide batter into pans

8. Bake 30–35 minutes

9. Cool completely

10. Beat cream cheese and butter

11. Add powdered sugar gradually

12. Add vanilla and salt

13. Level cake layers

14. Assemble with frosting

15. Apply crumb coat and final frosting
