Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1 cup unsalted butter, melted

1 1/2 cups light brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

2 cups finely grated carrots

1/2 cup chopped pecans or walnuts

1/2 cup white chocolate chips (optional)

8 ounces cream cheese, softened

1/4 cup unsalted butter, softened

2 1/2 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons heavy cream or milk

1/2 cup chopped toasted pecans

Light sprinkle of cinnamon

Instructions

1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.

2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. Whisk the melted butter and brown sugar until smooth. Add eggs one at a time and stir in vanilla extract.

4. Fold grated carrots into the wet mixture. Add pecans and white chocolate chips if desired.

5. Gradually add the dry ingredients and mix gently until combined.

6. Spread the batter evenly into the prepared baking pan.

7. Bake for 28–35 minutes until lightly golden and a toothpick comes out with moist crumbs.

8. Cool the blondies completely before frosting.

9. Beat cream cheese and butter until creamy. Add powdered sugar, vanilla, and heavy cream until smooth.

10. Spread frosting evenly over the cooled blondies.

11. Top with toasted pecans and a light sprinkle of cinnamon.

12. Chill for 20–30 minutes before slicing and serving.

Notes

Use freshly grated carrots for the best texture and moisture.

Avoid overbaking to keep the blondies soft and chewy.

Chill before slicing for cleaner bars and better frosting texture.
