Ingredients

1 pound ground beef

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 packet taco seasoning

1 cup black beans, drained and rinsed

1 cup corn kernels

2 cups red enchilada sauce

8 small flour tortillas

2 cups cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup diced tomatoes

1/4 cup green onions, sliced

1/2 cup sour cream

1 teaspoon salt

1/2 teaspoon black pepper

1 jalapeño, sliced (optional)


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch casserole dish.

2. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart while cooking. Drain excess grease.

3. Add chopped onion and cook until softened. Stir in the garlic and cook for another minute.

4. Sprinkle taco seasoning over the beef mixture and stir well. Add a small splash of water or enchilada sauce if needed.

5. Stir in the black beans and corn. Cook for 2 to 3 minutes until heated through.

6. Spread a thin layer of enchilada sauce onto the bottom of the casserole dish.

7. Add a layer of tortillas, slightly overlapping them to cover the bottom.

8. Spread part of the meat mixture over the tortillas, then drizzle with enchilada sauce and sprinkle with cheddar and Monterey Jack cheese.

9. Repeat the layers until all ingredients are used, finishing with sauce and cheese on top.

10. Bake uncovered for 25 to 30 minutes until the cheese is melted and bubbly.

11. Remove from the oven and let the casserole rest for 10 minutes before slicing.

12. Top with diced tomatoes, green onions, sour cream, and jalapeños before serving.

Notes

Allow the casserole to rest before slicing so the layers stay together better.

Freshly shredded cheese melts smoother and creates a creamier texture than pre-shredded cheese.

For extra crispy cheese on top, broil the casserole for 2 minutes at the end of baking.
