2 ½ pounds beef chuck roast cut into -inch cubes

2 tablespoons olive oil

1 tablespoon butter

1 medium yellow onion finely diced

4 cloves garlic minced

2 tablespoons tomato paste

3 tablespoons all-purpose flour

3 cups beef broth

1 cup red wine or extra beef broth

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

1 teaspoon onion powder

½ teaspoon garlic powder

1 cup sliced mushrooms optional

3 carrots chopped optional

2 celery stalks diced optional

1 tablespoon cornstarch

2 tablespoons water

Fresh parsley for garnish

Mashed potatoes for serving


Instructions

1. Pat the beef cubes dry with paper towels and season with salt pepper smoked paprika onion powder and garlic powder

2. Heat olive oil and butter in a large Dutch oven over medium-high heat

3. Sear the beef in batches until browned on all sides then transfer to a plate

4. Add diced onion to the pot and cook until softened then stir in garlic

5. Mix in tomato paste and cook for 1 minute

6. Sprinkle flour over the onion mixture and stir continuously

7. Pour in the red wine while scraping the bottom of the pot

8. Add beef broth Worcestershire sauce soy sauce thyme rosemary and bay leaves

9. Return the beef to the pot along with any juices

10. Cover and simmer on low heat for 2½ to 3 hours until fork-tender

11. Add mushrooms carrots and celery during the final 45 minutes if desired

12. Mix cornstarch and water then stir into the gravy if thicker sauce is preferred

13. Simmer uncovered until the gravy thickens

14. Serve hot over mashed potatoes and garnish with parsley
