Ingredients

For the Batter:

  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest

For Topping:

Instructions

  1. Prepare the Batter: In a mixing bowl, combine flour, granulated sugar, baking powder, and salt. Stir to mix evenly. Add melted butter, milk, and vanilla extract. Whisk until smooth.
  2. Assemble the Cobbler: Grease a baking dish (8×8 or 9×9) with butter or non-stick spray. Pour the batter into the dish and spread evenly.
  3. Prepare the Lemon Sauce: In a separate bowl, combine hot water, granulated sugar, lemon juice, and lemon zest. Stir until sugar dissolves.
  4. Add the Sauce: Carefully pour the lemon sauce over the batter without stirring. The layers will naturally form during baking.
