2 slices sourdough bread

1 cup cooked chicken breast, sliced or shredded

1/2 ripe avocado, sliced or mashed

2 slices mozzarella or provolone cheese

1/2 cup diced tomatoes

1 tablespoon chopped fresh parsley or cilantro

1 tablespoon butter or olive oil

1 clove garlic optional

1/4 teaspoon salt

1/4 teaspoon black pepper

2 slices cooked bacon optional


Instructions

1. Prepare the chicken by seasoning and cooking if needed, or warm up pre-cooked chicken

2. Slice or mash the avocado and season lightly with salt, pepper, and optional lemon juice

3. Butter one side of each bread slice evenly

4. Place one slice of bread butter-side down on a skillet over medium-low heat

5. Add one layer of cheese directly onto the bread

6. Layer the chicken evenly over the cheese

8. Place another layer of cheese on top of the fillings

9. Cover with the second slice of bread, butter-side facing up
