4–6 lb beef roast (ribeye roast or sirloin)
2 tbsp olive oil
1 tbsp kosher salt
1½ tsp black pepper
4 cloves garlic
2 tbsp fresh rosemary
2 tbsp fresh thyme
1 tbsp fresh parsley
1 tsp Dijon mustard
1 tbsp olive oil
1 tsp lemon zest
1 onion
2 carrots
2 celery stalks
1 cup beef broth or red wine
Instructions
1. Bring the beef roast to room temperature for 45–60 minutes and pat it dry.
2. Preheat the oven to 450°F (232°C).
3. Rub the roast with olive oil and season generously with salt and pepper.
4. Mix garlic, rosemary, thyme, parsley, Dijon mustard, olive oil, and lemon zest into a paste.
5. Spread the herb mixture evenly over the roast.
6. Place onion, carrots, and celery in a roasting pan and set the roast on top. Add broth or wine.
