Ingredients

1 pound ground turkey

2 cups cooked jasmine rice

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon honey

1 tablespoon sriracha

1 cucumber, sliced

1 cup shredded carrots

1 avocado, sliced

2 green onions, sliced

1 tablespoon sesame seeds

1/3 cup mayonnaise

1 tablespoon lime juice

1 tablespoon rice vinegar

1 tablespoon olive oil

Instructions

1. Rinse the jasmine rice under cold water and cook according to package instructions until fluffy and tender.

2. In a small bowl, whisk together soy sauce, garlic, ginger, sesame oil, honey, and sriracha to create the turkey sauce.

3. Heat olive oil in a large skillet over medium-high heat.

4. Add the ground turkey and cook until browned, breaking it apart as it cooks.

5. Pour the prepared sauce into the skillet and stir well until the turkey is fully coated and slightly caramelized.

6. Slice the cucumbers, shred the carrots if needed, and cut the avocado into thin slices.

7. In a separate bowl, mix mayonnaise, lime juice, and additional sriracha to create the spicy mayo drizzle.

8. Add warm rice to serving bowls and top with the cooked turkey mixture.

9. Arrange cucumbers, carrots, avocado, and green onions around the turkey.

10. Drizzle the spicy mayo sauce over the bowls and finish with sesame seeds before serving.

Notes

Use freshly cooked rice for the best texture and flavor.

Do not overcook the turkey or it may become dry.

Store toppings separately during meal prep to keep vegetables fresh and crisp.
