Ingredients

1 lb ground chicken

2 tbsp green curry paste

1 can (13.5 oz) coconut milk

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 small onion, chopped

2 cups broccoli florets

1 medium zucchini, sliced

2 cups fresh spinach

1 red chili, sliced

2 tbsp fish sauce

1 tbsp lime juice

1 tsp brown sugar

2 tbsp fresh cilantro, chopped

1 tbsp vegetable oil

1/2 cup chicken broth or water


Instructions

1. Prepare all ingredients by chopping vegetables, mincing garlic, and grating ginger.

2. Heat oil in a large pan over medium heat and sauté onion until soft.

3. Add garlic and ginger, cooking until fragrant.

4. Add ground chicken and cook until browned, breaking it apart.

5. Stir in green curry paste and cook for 2 minutes to release flavor.

6. Pour in coconut milk and mix until smooth.

7. Add broccoli and zucchini, simmering until slightly tender.

8. Stir in fish sauce, brown sugar, and broth if needed.

9. Add spinach and red chili, cooking until spinach wilts.

10. Finish with lime juice, garnish with cilantro, and serve hot.
