Ingredients

2 ½ cups all-purpose flour

⅓ cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, cold and cubed

½ cup heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon lemon zest

1 cup mixed berries

1 tablespoon all-purpose flour for coating berries

1 cup powdered sugar

2 tablespoons milk or heavy cream

½ teaspoon vanilla extract

1 teaspoon lemon juice optional


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. Add the cold cubed butter and cut it into the flour mixture until coarse crumbs form.

4. In a separate bowl, whisk together the heavy cream, eggs, vanilla extract, and lemon zest.

5. Pour the wet mixture into the dry ingredients and stir gently until combined.

6. Toss the mixed berries with 1 tablespoon flour and carefully fold them into the dough.

7. Transfer the dough onto a lightly floured surface and shape it into a 1-inch thick circle.

8. Cut the dough into 8 wedges and place them onto the prepared baking sheet.

9. Chill the scones for 10 minutes before baking for better texture.

10. Bake for 18 to 22 minutes until lightly golden brown.

11. Allow the scones to cool slightly on a wire rack.

12. Whisk together the powdered sugar, milk, vanilla extract, and optional lemon juice to make the glaze.
