Ingredients

1 1/2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups granulated sugar

2 large eggs

3/4 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

3/4 cup hot coffee or hot water

1 cup unsalted butter, softened

4 cups powdered sugar

3 tablespoons heavy cream

2 tablespoons green and white sprinkles

Instructions

1. Preheat the oven to 350°F and line a cupcake pan with paper liners.

2. In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

3. In another bowl, combine the sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.

4. Slowly mix the wet ingredients into the dry ingredients until combined.

5. Carefully pour in the hot coffee or hot water and stir gently until the batter becomes smooth.

6. Fill each cupcake liner about two-thirds full with batter.

7. Bake the cupcakes for 18 to 22 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

8. Remove the cupcakes from the oven and allow them to cool completely on a wire rack.

9. Beat the softened butter until creamy and fluffy.

10. Gradually mix in the powdered sugar followed by the heavy cream and vanilla extract until the frosting becomes smooth and airy.

11. Transfer the frosting into a piping bag and pipe decorative swirls onto each cooled cupcake.

12. Top with green and white sprinkles before serving.

Notes

Use room-temperature ingredients for a smoother batter and softer cupcake texture.

Do not overmix the batter because excessive mixing can make the cupcakes dense instead of fluffy.

Allow the cupcakes to cool completely before frosting to prevent the frosting from melting.
