3 lb chuck roast
1 1/2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
3 large yellow onions thinly sliced
3 cloves garlic minced
2 tbsp unsalted butter
1 tbsp olive oil
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp fresh thyme
1 bay leaf
2 cups beef broth
1 cup French onion soup
1/2 cup dry red wine
Instructions
1. Pat roast dry and season with salt, pepper, garlic powder, and onion powder
2. Sear roast in olive oil over medium-high heat until browned on all sides
3. Transfer roast to crockpot
4. In the same pan, melt butter and cook onions until deeply caramelized
5. Add garlic and cook briefly
6. Deglaze pan with red wine and scrape browned bits
7. Stir in Worcestershire sauce, soy sauce, balsamic vinegar, and thyme
8. Pour onion mixture over roast in crockpot
9. Add beef broth, French onion soup, and bay leaf
