Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • ¼ tsp ground cinnamon (optional)

For the Cheesecake Filling:

  • 32 oz (4 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 1 tbsp pure vanilla extract
  • 1 tbsp all-purpose flour
  • 4 large eggs, room temperature

For the Brûlée Topping:

  • ½ cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan with foil to prevent leaks.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8-10 minutes. Let cool.
  3. Beat cream cheese until smooth. Add sugar, flour, sour cream, and vanilla. Blend until creamy.
  4. Add eggs one at a time, mixing on low speed to avoid overbeating.
  5. Pour batter over cooled crust. Use a water bath for baking.
  6. Bake at 325°F (160°C) for 60-70 minutes. Let cool gradually.
  7. Refrigerate for at least 6 hours or overnight.
  8. Before serving, sprinkle sugar over the top and caramelize with a kitchen torch.
