Ingredients

12 oz pasta (fettuccine or linguine)

1 whole garlic bulb

2 tsp olive oil

2 tbsp unsalted butter

1 tbsp olive oil

1 cup heavy cream

3/4 cup Parmesan cheese

1 tbsp lemon zest

2 tbsp lemon juice

1/2 tsp black pepper

1/2 tsp salt

1/4 tsp red pepper flakes

1/4 cup pasta water

2 tbsp parsley


Instructions

1. Preheat oven to 400°F and roast garlic for 35–40 minutes until soft

2. Cook pasta until al dente and reserve pasta water

3. Mash roasted garlic into a paste

4. Melt butter and olive oil in skillet

5. Add garlic and cook gently

6. Pour in cream and simmer until slightly thickened

7. Stir in Parmesan cheese gradually

8. Add lemon zest and juice and season

9. Toss pasta with sauce and add pasta water as needed

10. Garnish and serve

Notes

Roast garlic until soft and golden for best flavor

Add lemon juice gradually to balance taste

Use freshly grated Parmesan for smooth texture
