Ingredients

2 tablespoons butter

1 tablespoon olive oil

1 medium onion, diced

2 medium carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

1/4 cup all-purpose flour

6 cups chicken broth

1 cup long-grain white rice

3 cups cooked shredded chicken

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

2 tablespoons fresh parsley, chopped


Instructions

1. Heat the butter and olive oil in a large soup pot over medium heat.

2. Add the onion, carrots, and celery. Cook for 6 to 8 minutes until softened.

3. Stir in the garlic and cook for 1 minute until fragrant.

4. Sprinkle the flour over the vegetables and stir continuously for 1 to 2 minutes.

5. Slowly pour in the chicken broth while stirring to create a smooth base.

6. Add the salt, black pepper, and thyme.

7. Stir in the rice and bring the soup to a gentle simmer.

8. Cook for 18 to 20 minutes, stirring occasionally, until the rice becomes tender.

9. Add the shredded chicken and cook for another 5 minutes until heated through.

10. Reduce the heat to low and slowly stir in the heavy cream.

11. Simmer gently for 3 to 5 minutes until the soup becomes creamy and smooth.

12. Garnish with fresh parsley and serve warm.

Notes

Do not boil the soup after adding the cream to keep the texture smooth and creamy.

If the soup thickens too much while stored, add extra chicken broth during reheating.

For the best flavor, use freshly shredded rotisserie chicken or homemade cooked chicken.
