Ingredients

1 pound fettuccine pasta

1/2 cup unsalted butter

2 cloves garlic, minced

2 cups heavy cream

1 cup whole milk

1 1/2 cups freshly grated Parmesan cheese

1/2 cup freshly grated Romano cheese

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped

Instructions

1. Bring a large pot of salted water to a rolling boil and cook the fettuccine pasta until al dente. Reserve some pasta water before draining.

2. In a large skillet over medium heat, melt the butter slowly without browning it.

3. Add the minced garlic and sauté until fragrant, stirring constantly to avoid burning.

4. Pour in the heavy cream and milk while stirring continuously. Allow the mixture to simmer gently for several minutes.

5. Gradually whisk in the Parmesan and Romano cheese until the sauce becomes smooth and creamy.

6. Season the sauce with salt and black pepper. Taste and adjust seasoning if needed.

7. Add the cooked pasta directly into the Alfredo sauce and toss until evenly coated.

8. If the sauce becomes too thick, stir in a small amount of reserved pasta water until the desired consistency is reached.

9. Garnish with fresh parsley and additional Parmesan cheese before serving immediately.

Notes

Freshly grated Parmesan cheese melts much better than pre-shredded cheese and creates a smoother Alfredo sauce.

Keep the heat low while cooking the sauce to prevent the cream from separating or becoming oily.

Reserve pasta water before draining because it helps loosen the sauce while maintaining a creamy texture.
