Ingredients

1 1/2 cups chocolate sandwich cookie crumbs

6 tablespoons melted butter

3/4 cup granulated sugar

1 cup unsalted butter, softened

6 ounces semi-sweet chocolate, melted and cooled

1 teaspoon vanilla extract

4 large eggs

1 1/4 cups heavy whipping cream

1/4 cup powdered sugar

1/2 cup chocolate shavings

Instructions

1. Crush the chocolate sandwich cookies into fine crumbs and combine them with melted butter until evenly coated.

2. Press the crumb mixture firmly into the bottom and sides of a pie dish to form the crust. Chill the crust while preparing the filling.

3. Melt the semi-sweet chocolate until smooth and allow it to cool slightly.

4. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.

5. Add the melted chocolate and vanilla extract to the butter mixture and continue mixing until smooth.

6. Add the eggs one at a time, beating several minutes after each addition to create a silky and airy filling.

7. Pour the chocolate filling into the prepared crust and smooth the top evenly.

8. Refrigerate the pie for at least 4 hours or overnight until fully set.

9. In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form.

10. Spread or pipe the whipped cream over the chilled pie and garnish with chocolate shavings.

11. Slice and serve chilled.

Notes

Use high-quality chocolate for the smoothest texture and richest chocolate flavor.

Allow the melted chocolate to cool slightly before mixing it into the butter mixture to prevent separation.

For clean slices, chill the pie overnight and dip the knife in warm water before cutting.
