2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

2 cups granulated sugar

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup hot coffee or hot water

1 cup creamy peanut butter

1/2 cup unsalted butter

3 to 4 cups powdered sugar

1/4 cup heavy cream or milk

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and prepare three 8-inch cake pans with grease and parchment paper.

2. Sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Whisk eggs, milk, oil, and vanilla until smooth.

4. Combine wet and dry ingredients and mix until just combined.

5. Slowly add hot coffee while mixing on low speed.

6. Divide batter into pans and bake for 25–30 minutes.

7. Cool cakes completely on a rack.

8. Beat peanut butter and butter until creamy.

9. Add powdered sugar gradually and mix well.

10. Add cream and vanilla and beat until fluffy.

11. Level cake layers if needed.

12. Layer cake with frosting between each layer.

13. Apply crumb coat and chill for 20 minutes.

14. Add final frosting layer and decorate.

Notes

Use room temperature ingredients for best results.

Avoid overmixing the batter to keep it soft.
