Ingredients

3 oz cherry gelatin

1 cup boiling water

1 cup Cherry Coke

1/2 cup cold water

1/4 cup maraschino cherry juice

1 cup maraschino cherries

2 cups whipped topping

6 fresh cherries for garnish

4 oz softened cream cheese optional

1 tsp vanilla extract optional

1/2 cup crushed pineapple optional

Instructions

1. Pour the cherry gelatin into a large mixing bowl.

2. Add the boiling water and whisk thoroughly until the gelatin completely dissolves.

3. Slowly pour in the Cherry Coke while stirring gently to reduce foaming.

4. Add the cold water and maraschino cherry juice, then stir until combined.

5. Fold the maraschino cherries into the gelatin mixture.

6. Pour the mixture into a trifle bowl, serving dish, or individual dessert cups.

7. Refrigerate for 4 to 6 hours or until fully set.

8. In a separate bowl, mix the whipped topping with softened cream cheese and vanilla extract if using.

9. Spread the whipped topping evenly over the chilled gelatin layer.

10. Garnish with fresh cherries and additional cherry syrup if desired.

11. Chill for another 20 to 30 minutes before serving.

12. Serve cold and enjoy.

Notes

Use freshly opened Cherry Coke for the boldest flavor and best texture.

Allow the gelatin mixture to cool slightly before refrigerating so it sets evenly.

For the best texture and flavor, chill the dessert overnight before serving.
