Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
3/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups cherries, pitted and halved
1/2 cup all-purpose flour
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 cup cold unsalted butter
Instructions
1. Preheat the oven to 375°F (190°C) and line a muffin pan with paper liners or grease the cups lightly.
2. In a small bowl, prepare the crumble topping by mixing the flour, brown sugar, cinnamon, and cold butter until coarse crumbs form. Refrigerate while preparing the batter.
3. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
4. In another bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.
5. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing the batter.
6. Fold the cherries carefully into the batter until evenly distributed.
7. Fill each muffin cup about three-quarters full with batter.
8. Sprinkle the crumble topping generously over each muffin.
9. Bake for 20 to 24 minutes or until the tops are golden brown and a toothpick inserted into the center comes out mostly clean.
10. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.
11. Serve warm or at room temperature.
Notes
Use cold butter in the crumble topping to achieve a crisp cobbler texture.
Lightly coat the cherries with flour before folding them into the batter to prevent sinking.
Do not overmix the batter or the muffins may become dense instead of soft and fluffy.
