Ingredients
2 ripe pears
1/3 cup feta cheese, crumbled
1/4 cup cranberries (dried or fresh)
2 tablespoons honey
1 tablespoon olive oil
1 teaspoon fresh thyme leaves
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped walnuts or pecans (optional)
Instructions
1. Preheat oven to 375°F (190°C). Wash pears, slice in half lengthwise, and scoop out the core to create a cavity.
2. Place pears cut-side up in a baking dish and drizzle with olive oil. Season with salt and black pepper.
3. Bake for 15–20 minutes until slightly softened but still holding shape.
4. Remove from oven and fill each pear with feta cheese and cranberries.
5. Drizzle honey over the pears and sprinkle with nuts if using.
6. Return to oven and bake for another 10–15 minutes until tender and lightly caramelized.
7. Remove from oven, garnish with fresh thyme, and serve warm with pan juices.
Notes
Use pears that are ripe but firm to maintain their shape during baking.
Add honey during the second bake to prevent burning and ensure proper caramelization.
For extra texture, toast the nuts lightly before adding them to enhance their flavor.
