Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, minced (optional)

For the Dressing:

  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and black pepper to taste
  • Pinch of cumin (optional)

Instructions

  1. If using raw shrimp, boil in salted water for 2-3 minutes until pink and opaque, then transfer to ice bath. Alternatively, grill or sauté until just cooked.
  2. In a bowl, whisk lime juice, olive oil, garlic, salt, pepper, and cumin.
  3. Dice avocado, halve tomatoes, chop onion, jalapeño, and cilantro.
  4. In a large bowl, combine shrimp, avocado, tomato, onion, cilantro, and jalapeño.
  5. Pour dressing over and gently toss to combine.
  6. Chill for 10-15 minutes before serving.
