Ingredients

  • 1 cup granulated sugar
  • 1/2 cup honey or corn syrup
  • 1/4 cup water
  • 2 tablespoons unsalted butter
  • 1 1/2 cups mixed nuts and seeds (almonds, peanuts, sunflower seeds, or sesame seeds)
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Optional Add-ins:

  • 1/2 teaspoon cinnamon or nutmeg
  • Melted dark or white chocolate for drizzling
  • Pinch of cayenne or chili flakes for a sweet-spicy twist

Instructions

  1. Prepare Your Workspace: Line a baking sheet with parchment paper or a silicone mat. Lightly grease a wooden spoon or spatula.
  2. Roast the Nuts and Seeds: Toast them in a dry pan over medium heat for 3–5 minutes until fragrant. Set aside.
  3. Make the Caramel: In a heavy-bottomed saucepan, combine sugar, honey (or corn syrup), and water. Stir over medium heat until the sugar dissolves. Once dissolved, stop stirring and allow it to boil. Cook until the mixture reaches 300°F (150°C) (hard crack stage).
  4. Add Butter and Flavorings: Remove from heat and stir in butter, salt, vanilla extract, and baking soda. The mixture will foam slightly.
  5. Mix in the Nuts and Seeds: Quickly stir in the toasted nuts and seeds, coating them evenly.
  6. Pour and Spread: Pour the mixture onto the prepared baking sheet, spreading it evenly to about 1/4-inch thickness.
  7. Cool Completely: Let the brittle sit undisturbed for 30–40 minutes until fully hardened.
  8. Break into Pieces: Once set, break the brittle into smaller pieces using your hands or a rolling pin.
  9. Store Properly: Keep in an airtight container at room temperature for up to two weeks or freeze for up to three months.
