Ingredients

For the Whipped Feta:

  • 200g feta cheese (block, not pre-crumbled)
  • 3 tbsp cream cheese (softened)
  • 1 tbsp olive oil
  • 1 tsp lemon zest (optional)
  • Black pepper to taste

For the Roasted Strawberries:

  • 1 1/2 cups fresh strawberries (hulled and halved)
  • 1 tbsp honey (or maple syrup)
  • 1 tbsp olive oil
  • Pinch of sea salt
  • Cracked black pepper

Optional Garnishes:

  • Fresh thyme, oregano, or basil
  • Extra olive oil
  • Toasted bread or crackers for serving

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Toss strawberries with honey, olive oil, sea salt, and pepper. Spread evenly on the baking sheet.
  3. Roast strawberries for 18–20 minutes until soft and slightly caramelized. Let cool.
  4. In a food processor, blend feta, cream cheese, olive oil, and lemon zest until smooth and creamy. Season with pepper.
  5. Spread whipped feta onto a serving plate or bowl.
  6. Spoon roasted strawberries and their juices over the feta.
  7. Drizzle with extra olive oil and garnish with herbs.
  8. Serve with toasted bread or crackers.
