Ingredients
For the Whipped Feta:
- 200g feta cheese (block, not pre-crumbled)
- 3 tbsp cream cheese (softened)
- 1 tbsp olive oil
- 1 tsp lemon zest (optional)
- Black pepper to taste
For the Roasted Strawberries:
- 1 1/2 cups fresh strawberries (hulled and halved)
- 1 tbsp honey (or maple syrup)
- 1 tbsp olive oil
- Pinch of sea salt
- Cracked black pepper
Optional Garnishes:
- Fresh thyme, oregano, or basil
- Extra olive oil
- Toasted bread or crackers for serving
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Toss strawberries with honey, olive oil, sea salt, and pepper. Spread evenly on the baking sheet.
- Roast strawberries for 18–20 minutes until soft and slightly caramelized. Let cool.
- In a food processor, blend feta, cream cheese, olive oil, and lemon zest until smooth and creamy. Season with pepper.
- Spread whipped feta onto a serving plate or bowl.
- Spoon roasted strawberries and their juices over the feta.
- Drizzle with extra olive oil and garnish with herbs.
- Serve with toasted bread or crackers.
