A warm, vibrant salad that combines cheesy tortellini, juicy grilled chicken, fresh greens, and a tangy-sweet balsamic glaze. It’s quick, satisfying, and bursting with texture and flavor—perfect for lunch or dinner.
Ingredients
8 oz cheese tortellini
2 cups cooked chicken breast or thighs, sliced or cubed
1 cup cherry tomatoes, halved
2 cups mixed greens (spinach, arugula, or spring mix)
3 tbsp balsamic glaze
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh herbs (basil, thyme, or parsley, optional)
Instructions
1. Bring a pot of salted water to a boil. Cook tortellini for 3–5 minutes, then drain and set aside.
2. If using raw chicken, season with salt and pepper, then grill or pan-sear in olive oil until fully cooked (about 5–6 minutes per side). Let rest, then slice.
3. (Optional) In a pan, sauté the cooked tortellini in a little olive oil until lightly golden.
4. In a large bowl, combine the greens, tortellini, chicken, and cherry tomatoes.
5. Drizzle balsamic glaze over the top. Toss gently to combine.
6. Sprinkle with herbs if using, and adjust seasoning with salt and pepper to taste. Serve warm.
