Ingredients
2 cups Medjool dates, pitted
1 cup raw walnuts
1/3 cup unsweetened cocoa powder
1/4 cup almond flour
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1 tablespoon maple syrup (optional)
1/3 cup chopped nuts or dried fruit (optional)
Instructions
1. Pit and chop the Medjool dates. Soak in warm water if dry. Line a square baking dish with parchment paper.
2. Add walnuts and almond flour to a food processor. Pulse until finely ground.
3. Add cocoa powder, vanilla, and salt to the processor and blend until just mixed.
4. Add dates gradually, blending until a sticky dough forms. Add maple syrup or water if too dry.
5. Fold in any optional mix-ins like chopped nuts or dried fruit.
6. Press mixture evenly into the prepared dish. Use the back of a spoon to flatten.
7. Chill in the fridge for 1 hour or freeze for 30 minutes until firm.
8. Remove from the pan and slice into squares. Serve chilled or at room temperature.
Notes
Use fresh, soft Medjool dates for best texture and natural sweetness.
Don’t skip chilling—it helps the brownies firm up and slice cleanly.
Add a pinch of flaky salt on top for a gourmet finish.
