Ingredients
- 1 sheet of puff pastry, thawed
- 2 medium yellow onions, sliced into 1/2-inch rounds
- 1 tbsp olive oil or butter (for searing)
- 1 cup shredded Gruyère cheese
- Fresh thyme sprigs (about 6 small sprigs)
- Salt and freshly ground black pepper, to taste
- 2 tbsp hot honey (store-bought or homemade)
- 1 egg, beaten (optional, for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and brush lightly with olive oil or butter.
- Sear the onion slices in a skillet with olive oil for 1–2 minutes per side until lightly caramelized. Season with salt and pepper.
- Place a sprig of thyme on the baking sheet, then top with an onion slice and a small mound of shredded Gruyère.
- Cut puff pastry into six squares and lay one square over each onion-cheese pile. Press gently around the edges.
- Brush the pastry tops with beaten egg if using.
- Bake for 20–25 minutes, until pastry is puffed and golden brown.
- Let cool for 2 minutes, then carefully flip each tart upside-down so the onion faces up.
- Drizzle each tart with hot honey and garnish with fresh thyme.
