Ingredients
1 pound steak tips (sirloin or ribeye)
2 tablespoons Cajun seasoning
12 ounces pasta (fettuccine or penne)
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic, minced
½ small onion, finely chopped (optional)
1 ½ cups heavy cream
1 cup freshly grated Parmesan cheese
½ teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Season steak tips generously with Cajun seasoning, salt, and pepper.
2. In a hot skillet, heat olive oil and 1 tablespoon of butter. Sear steak tips for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
3. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water before draining.
4. In the same skillet, lower heat to medium. Add remaining butter, then sauté garlic and onion until soft and fragrant.
5. Pour in heavy cream, stirring to scrape up any browned bits. Simmer for 3–4 minutes.
6. Add Parmesan cheese and stir until smooth. Use reserved pasta water to thin the sauce as needed. Adjust seasoning.
7. Add cooked pasta and toss in the sauce. Return steak tips to the pan and combine gently.
8. Simmer together for 2 minutes, then remove from heat.
9. Serve hot, garnished with chopped parsley and extra Parmesan.
Notes
Always sear the steak in batches to avoid overcrowding the pan.
Use freshly grated Parmesan for a smoother, richer sauce.
Reserve pasta water before draining—it’s key to adjusting sauce consistency.
