Ingredients

1 cup unsalted butter, softened

2/3 cup granulated sugar

1 1/2 teaspoons vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

25 soft caramels, unwrapped

2 tablespoons heavy cream

1/2 cup milk chocolate chips or chopped milk chocolate

Flaky sea salt, for topping

Extra granulated sugar, for rolling dough balls


Instructions

1. Cream together the softened butter and sugar using a hand or stand mixer until light and fluffy, about 2–3 minutes.

2. Add in vanilla extract and mix until fully combined.

3. Gradually add flour and salt to the mixture, blending until a soft dough forms.

4. Scoop 1-tablespoon portions of dough, roll into balls, and roll in granulated sugar.

5. Place the balls on a lined baking sheet and press a thumb or teaspoon into the center of each to form a well.

6. Chill the tray of shaped dough for 30 minutes to help retain their shape.

7. Preheat oven to 350°F (175°C). Bake cookies for 12–14 minutes, until edges are lightly golden.

8. If the centers puff during baking, gently press them again right after removing from the oven.

9. Melt soft caramels with heavy cream in the microwave in 30-second intervals, stirring in between, until smooth.

10. Spoon melted caramel into the center of each cookie and let set for a few minutes.

11. Melt chocolate in the microwave in short bursts, stirring until smooth. Drizzle over caramel with a spoon or piping bag.

12. While chocolate is still soft, sprinkle sea salt on top. Let cookies fully set before serving or storing.

Notes

Chill the dough to prevent spreading and preserve the shape of the thumbprint.

Use a piping bag or zip-top bag with the tip snipped off for neater caramel and chocolate drizzle.

If the caramel starts to harden while filling, reheat gently in the microwave to keep it smooth.
