Ingredients

  • 1 tbsp olive oil
  • 12 oz chicken sausage, sliced
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup orzo pasta (dry)
  • 2 cups chicken broth (low sodium)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes or lemon zest

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned on both sides. Remove and set aside.
  2. In the same skillet, sauté diced onion for 2–3 minutes until soft. Add garlic and stir for 30 seconds.
  3. Add orzo and toast for 1–2 minutes.
  4. Pour in chicken broth and bring to a simmer. Cover and cook 8–10 minutes, stirring occasionally.
  5. Stir in heavy cream and grated Parmesan. Simmer until smooth.
  6. Add spinach and stir until wilted.
  7. Return sausage to the pan, stir everything together, and cook for 2 more minutes.
  8. Season with salt, pepper, and optional toppings. Serve warm.
