Ingredients
- 1 tbsp olive oil
- 12 oz chicken sausage, sliced
- 1 small yellow onion, finely diced
- 3 garlic cloves, minced
- 1 cup orzo pasta (dry)
- 2 cups chicken broth (low sodium)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- Salt and freshly ground black pepper, to taste
- Optional: red pepper flakes or lemon zest
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned on both sides. Remove and set aside.
- In the same skillet, sauté diced onion for 2–3 minutes until soft. Add garlic and stir for 30 seconds.
- Add orzo and toast for 1–2 minutes.
- Pour in chicken broth and bring to a simmer. Cover and cook 8–10 minutes, stirring occasionally.
- Stir in heavy cream and grated Parmesan. Simmer until smooth.
- Add spinach and stir until wilted.
- Return sausage to the pan, stir everything together, and cook for 2 more minutes.
- Season with salt, pepper, and optional toppings. Serve warm.
