Ingredients

  • 2 large boneless, skinless chicken breasts (halved horizontally)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter (divided)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg (optional)
  • 3 cups fresh spinach
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
  3. Sear chicken until golden and cooked through, about 5–6 minutes per side. Remove and set aside.
  4. Lower heat slightly. Add remaining butter and garlic to skillet. Sauté until fragrant.
  5. Deglaze pan with chicken broth, scraping up browned bits.
  6. Stir in cream, bring to a simmer, and let thicken slightly (3–4 minutes).
  7. Add Parmesan and nutmeg, stir until smooth.
  8. Add spinach and cook until wilted, 1–2 minutes.
  9. Return chicken to skillet and spoon sauce over top. Simmer 2 more minutes.
  10. Garnish with parsley and serve hot.
