Ingredients
- 2 large boneless, skinless chicken breasts (halved horizontally)
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter (divided)
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/3 cup freshly grated Parmesan cheese
- 1/4 teaspoon ground nutmeg (optional)
- 3 cups fresh spinach
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Pat chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Sear chicken until golden and cooked through, about 5–6 minutes per side. Remove and set aside.
- Lower heat slightly. Add remaining butter and garlic to skillet. Sauté until fragrant.
- Deglaze pan with chicken broth, scraping up browned bits.
- Stir in cream, bring to a simmer, and let thicken slightly (3–4 minutes).
- Add Parmesan and nutmeg, stir until smooth.
- Add spinach and cook until wilted, 1–2 minutes.
- Return chicken to skillet and spoon sauce over top. Simmer 2 more minutes.
- Garnish with parsley and serve hot.
