Ingredients
- 2 English muffins, halved
- 1 croissant, halved
- 4 large eggs
- 4 slices bacon
- 2 slices ham
- 3 slices cheddar cheese
- 1/2 avocado, sliced
- 1 tbsp butter or cooking spray
- Salt and pepper, to taste
Instructions
- Slice and toast the English muffins and croissant with butter until golden brown.
- Cook bacon in a skillet over medium heat until crisp; drain on paper towels.
- Heat ham slices in the skillet for 1 minute per side.
- Scramble 2 eggs with a splash of milk; season with salt and pepper. Cook over low heat until fluffy.
- Fry 2 eggs sunny side up or over easy.
- Assemble Sandwich 1: English muffin base, slice of cheddar, ham, bacon, top muffin.
- Assemble Sandwich 2: English muffin base, avocado, fried egg, cheddar, top muffin.
- Assemble Sandwich 3: Croissant base, scrambled eggs, cheddar slice, croissant top.
- Optionally, heat sandwiches in skillet or toaster oven for 2–3 minutes to melt cheese.
