Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 3 tbsp butter, divided
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • Fresh cilantro or parsley for garnish

Instructions

  1. Prepare the Chicken – Season the chicken pieces with salt, pepper, smoked paprika, and cumin.
  2. Sear the Chicken – In a large skillet, melt 1 tbsp butter over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Make the Sauce – In the same skillet, melt another tbsp of butter. Add garlic and sauté for 30 seconds. Stir in tomato paste and chicken broth, scraping up any browned bits from the pan.
  4. Simmer with Cream – Lower the heat and pour in the heavy cream. Stir well and let it simmer for 5 minutes to thicken.
  5. Combine & Finish – Return the chicken to the skillet, toss it in the sauce, and cook for another 3-4 minutes until fully coated and heated through.
  6. Garnish & Serve – Add fresh cilantro or parsley, then serve hot with rice, naan, or mashed potatoes.
