Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 3 tbsp butter, divided
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 2 tbsp tomato paste
- 1/2 cup chicken broth
- 1 cup heavy cream
- Fresh cilantro or parsley for garnish
Instructions
- Prepare the Chicken – Season the chicken pieces with salt, pepper, smoked paprika, and cumin.
- Sear the Chicken – In a large skillet, melt 1 tbsp butter over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown. Remove and set aside.
- Make the Sauce – In the same skillet, melt another tbsp of butter. Add garlic and sauté for 30 seconds. Stir in tomato paste and chicken broth, scraping up any browned bits from the pan.
- Simmer with Cream – Lower the heat and pour in the heavy cream. Stir well and let it simmer for 5 minutes to thicken.
- Combine & Finish – Return the chicken to the skillet, toss it in the sauce, and cook for another 3-4 minutes until fully coated and heated through.
- Garnish & Serve – Add fresh cilantro or parsley, then serve hot with rice, naan, or mashed potatoes.
