Ingredients
100g vermicelli rice noodles
1 tablespoon sesame oil
2 garlic cloves minced
1 small onion finely chopped
1 cup shredded carrots
1/2 cup chopped bell peppers
1/2 cup shredded cabbage or napa cabbage
1/2 cup chopped mushrooms
1 tablespoon soy sauce
1 teaspoon hoisin sauce (optional)
Salt and black pepper to taste
1/2 teaspoon chili flakes (optional)
1/2 cup cooked protein of choice (tofu, shredded chicken, minced pork)
10 rice paper sheets
A bowl of warm water
2 tablespoons vegetable oil or spray
Dipping sauce of choice for serving
Instructions
1. Soak rice noodles in warm water for 5–7 minutes until soft. Drain and cut into shorter lengths.
2. In a skillet, heat sesame oil. Sauté garlic and onion until fragrant.
3. Add carrots, bell peppers, cabbage, mushrooms, and protein. Stir-fry for 5–7 minutes.
4. Add soy sauce, hoisin, chili flakes, salt, and pepper. Stir and let cool.
5. Soften one rice paper sheet in warm water for 5–10 seconds.
6. Place filling in the center, fold bottom over, then sides, and roll tightly.
7. Brush or spray rolls with oil. Preheat air fryer to 375°F (190°C).
8. Air fry for 10–12 minutes, flipping halfway.
9. Let cool slightly and serve with your favorite dipping sauce.
Notes
Don’t over-soak rice paper — a quick dip is all you need.
