Ingredients
- 1 lb (450g) ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (14.5 oz) diced tomatoes (with green chilies or plain)
- 1 can (8 oz) tomato sauce
- 2 cups beef broth (or substitute chicken/vegetable broth)
- 1 tsp olive oil

- Fresh cilantro

Instructions
- Heat olive oil in a large Dutch oven or stock pot over medium heat. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another minute.
- Add ground beef, breaking it apart with a spoon. Cook until browned, about 5–7 minutes. Drain any excess fat.
- Stir in taco seasoning, coating the beef mixture evenly. Cook for 1 more minute to release the spices’ aroma.
- Add diced tomatoes, tomato sauce, black beans, corn, and beef broth. Stir until well combined.
- Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
