Description

Ingredients

3 1/2 cups (440g) all-purpose flour

2 1/4 tsp active dry yeast

1 cup (240ml) warm milk

2 tbsp granulated sugar

1 tsp fine salt

4 tbsp unsalted butter, softened

2 cups shredded mozzarella

1 cup shredded white cheddar or provolone

4 cloves garlic, minced

3 tbsp fresh herbs (thyme, parsley, or rosemary), finely chopped

2 tbsp olive oil

1 egg, beaten (for egg wash)


Instructions

1. Activate Yeast: Stir warm milk, sugar, and yeast; rest 5–10 minutes until foamy.

2. Make Dough: Mix in butter, salt, and flour; knead 8–10 minutes (by hand) or 5–6 in a mixer until smooth and elastic.

3. First Rise: Place in greased bowl, cover, and rise 60–90 minutes until doubled.

4. Make Filling: Gently warm olive oil; sauté garlic 1–2 minutes (do not brown); stir in herbs; cool slightly.

5. Roll & Fill: Roll dough to a rectangle (~1/2 inch thick); brush herb-garlic oil; sprinkle cheeses evenly.

6. Shape Swirl: Roll into a log; slice lengthwise; twist halves cut-side up; place in greased loaf pan.

7. Second Rise: Cover and proof 30–40 minutes until puffy.

8. Bake: Brush with beaten egg; bake at 350°F (175°C) for 30–35 minutes until golden and cheese is bubbly.

9. Cool & Serve: Rest 10–15 minutes before slicing; serve warm.

Notes

Use warm milk (105–110°F / 40–43°C) so the yeast thrives.

Avoid over-stuffing with cheese to prevent seam blowouts and uneven baking.

Let the shaped loaf proof fully; under-proofing leads to a dense crumb.
