Ingredients
For the Chicken & Pasta:
- 2–3 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 8 oz penne pasta
- 2 tablespoons olive oil
- Salt & black pepper to taste
- 1 teaspoon garlic powder (optional)
For the Sauce:
- 1 cup chicken broth
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 cup heavy cream
- 1 tablespoon butter (optional)
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Bring a pot of salted water to boil. Cook pasta until al dente, drain and reserve 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder.
- Sear chicken until golden and cooked through (5–7 mins). Remove from pan.
- Lower heat to medium. In the same pan, whisk in mustard, honey, and chicken broth. Simmer for 3–4 mins.
- Stir in heavy cream and simmer 2–3 mins until sauce thickens. Adjust seasoning to taste.
- Return chicken to skillet and stir to coat. Add pasta and toss everything together. Add reserved pasta water if needed.
- Finish with butter (optional) and garnish with herbs.
