Ingredients

1 lb ground beef (80/20)

1 lb ground pork

1 cup panko breadcrumbs

2 large eggs

3 tbsp gochujang paste

3 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil

4 green onions, chopped (divided, for mix and garnish)

2 tbsp brown sugar

1 tbsp rice vinegar

3 tbsp ketchup

1 tsp sesame seeds


Instructions

1. Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.

2. In a large bowl, combine ground beef and pork.

3. Add panko, eggs, garlic, ginger, green onions, soy sauce, and sesame oil.

4. Mix gently by hand until just combined.

5. Transfer the mixture into the loaf pan and shape evenly.

6. Bake for 30 minutes uncovered.

7. Meanwhile, mix gochujang, ketchup, brown sugar, soy sauce, and rice vinegar in a bowl to make the glaze.

8. After 30 minutes, brush the glaze generously over the meatloaf.

9. Return to oven for another 15–20 minutes, until glaze is caramelized and internal temp is 160°F (71°C).

10. Let rest for 10 minutes before slicing.

11. Garnish with chopped green onions and sesame seeds before serving.

Notes

For a milder loaf, reduce the gochujang to 1–2 tablespoons.

Don’t skip the resting time — it ensures juicy, clean slices.

Make double glaze and serve extra on the side for dipping.
