Ingredients
- 6 boneless, skinless chicken thighs
- 1 ripe mango, peeled and cubed
- 1 cup fresh pineapple, chopped
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 tablespoon brown sugar
- Fresh cilantro or mint, chopped (for garnish)
Instructions
- In a mixing bowl, whisk together olive oil, soy sauce, garlic, smoked paprika, and brown sugar.
- Add the chicken thighs to the bowl, tossing to coat. Let marinate for at least 30 minutes (up to 4 hours).
- Prepare mango and pineapple by cutting into chunks. Toss lightly in oil if desired.
- Preheat grill or grill pan to medium-high heat and oil the surface.
- Grill the chicken for 5–6 minutes per side, until cooked through (165°F internal temperature).
- Grill the fruit for 2–3 minutes until caramelized.
