This tropical-inspired grilled chicken recipe combines juicy boneless thighs with caramelized mango and pineapple for a smoky-sweet dish that’s bursting with summer flavor. Easy to prepare and crowd-pleasing, it’s perfect for barbecues or vibrant weeknight dinners.


Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 ripe mango, peeled and cubed
  • 1 cup fresh pineapple, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • Fresh cilantro or mint, chopped (for garnish)

Instructions

  1. In a mixing bowl, whisk together olive oil, soy sauce, garlic, smoked paprika, and brown sugar.
  2. Add the chicken thighs to the bowl, tossing to coat. Let marinate for at least 30 minutes (up to 4 hours).
  3. Prepare mango and pineapple by cutting into chunks. Toss lightly in oil if desired.
  4. Preheat grill or grill pan to medium-high heat and oil the surface.
  5. Grill the chicken for 5–6 minutes per side, until cooked through (165°F internal temperature).
  6. Grill the fruit for 2–3 minutes until caramelized.
  7. Arrange chicken on a platter, top with grilled fruit, and garnish with herbs.
