Ingredients

2 tablespoons olive oil or coconut oil

1 medium onion, diced

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes

4 cups sweet potatoes, peeled and diced

4 cups vegetable broth

1 can (13.5 oz) full-fat coconut milk

Juice of 1 lime

Salt and pepper, to taste

Fresh cilantro, chopped

Coconut cream or yogurt, optional

Lime wedges, for serving


Instructions

1. Heat oil in a large pot over medium heat. Sauté diced onion until translucent, about 5 minutes.

2. Add garlic and ginger. Cook for another 1–2 minutes until fragrant.

3. Stir in spices and toast for 30 seconds.

4. Add sweet potatoes and broth, bring to boil, then simmer 20 minutes.

5. Blend until smooth.

6. Stir in coconut milk and lime juice, simmer 5 minutes.

7. Adjust seasoning and serve.

Notes

Use light coconut milk for a lighter version.

Top with roasted chickpeas for added protein.

Roasting sweet potatoes first deepens flavor.
