- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 3 cloves garlic, minced
- 1/2 cup diced pineapple (optional)
- 1 tablespoon cornstarch + 1 tablespoon water (optional, for thickening)

Instructions
- Trim chicken and cut into bite-sized pieces. Season lightly with salt and pepper.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic. Add diced pineapple if using.
- Place the chicken in the bottom of the crock pot and pour the sauce over the top.
