Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 3 cloves garlic, minced
  • 1/2 cup diced pineapple (optional)
  • 1 tablespoon cornstarch + 1 tablespoon water (optional, for thickening)
  • Chopped green onions, for garnish
  • Salt and pepper, to taste

Instructions

  • Trim chicken and cut into bite-sized pieces. Season lightly with salt and pepper.
  • In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic. Add diced pineapple if using.
  • Place the chicken in the bottom of the crock pot and pour the sauce over the top.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.
  • To thicken the sauce (optional), mix cornstarch with water and stir into the crock pot during the last 30 minutes of cooking on high.
  • Serve hot, garnished with chopped green onions.
