Ingredients

500 g boneless skinless chicken thighs

120 ml sweet chili sauce

30 ml soy sauce

3 cloves garlic minced

2 limes juiced (divided)

120 ml coconut milk (full-fat)

30 g fresh cilantro chopped

300 g jasmine rice

15 ml olive oil

2 g salt

1 g black pepper


Instructions

1. Marinate the chicken thighs in sweet chili sauce, soy sauce, minced garlic, and juice from 1 lime for at least 30 minutes.

2. Cook the jasmine rice until fluffy and fragrant, then keep warm.

3. Heat a grill pan or skillet with olive oil over medium-high heat. Cook chicken for 5–6 minutes per side until golden brown and fully cooked.

4. In a small bowl, whisk coconut milk, juice from the remaining lime, and a pinch of salt to make the drizzle. Thin with water if needed.
